Grilled Zucchini with Mint and Garlic

Fresh and vibrant in colour, my Nonna's Grilled Zucchini with Mint and Garlic are so simple to make, that they will become the most popular dish to devour over the warmer months.

To make this delicious dish all you will need is zucchini, fresh mint, garlic, and good quality extra virgin olive oil. salt and pepper. When zucchini is grilled, they release a beautiful, charred flavour which compliments the dish. You can pair these grilled zucchinis with mint with grilled meat, fish, or cheese for you can eat them just as is!

Grilled Zucchini with Mint and Garlic

Ingredients for Grilled Zucchini with Mint and Garlic

  • 2 large zucchinis, sliced lengthways

  • 1 cup fresh mint leaves, roughly chopped

  • 4 garlic cloves, peeled and finely sliced

  • 1/2 cup Extra Virgin Olive Oil

  • 1/4 cup white vinegar

  • Salt and pepper to season

Method for Grilled Zucchini with Mint and Garlic

Rinse the zucchini under cold water to remove any impurities and dry well. Remove the stalks and slice each zucchini lengthways. Use a vegetable mandolin to carefully slice the zucchini into ribbons to achieve the perfect thickness. Set aside once all the zucchini has been sliced.

Heat a grill pan or BBQ (if using) to a high heat. Fry the zucchini without any oil in batches over high heat for 1-2 minutes on each side to achieve a beautiful charcoal flavour. Repeat until all the zucchinis have been grilled, and once they have, place them all into a large bowl to set aside to cool completely.

Once the zucchini is cooled, season with extra virgin olive oil, white vinegar, fresh mint leaves, sliced garlic, salt, and pepper. Using your hand to toss well, make sure all zucchini ribbons are completely covered. Pour into a large platter to serve or store in an airtight jar in the refrigerator for 1-2 weeks.
