Ingredients for Baked Brie with Pistachios Cranberries Honey and Thyme

  • 1 wheel of Brie cheese

  • 1/2 cup shelled pistachios, chopped

  • 1/2 cup dried cranberries

  • 2 tablespoons honey

  • Fresh thyme sprigs

  • Crackers or sliced baguette for serving

Method

Preheat your oven to 350°F (175°C).

Place the Brie wheel in a baking dish. Use a knife to score the rind of the brie in a diagonal pattern. If you prefer, you can leave the rind on for added texture, or remove the top layer for a gooier center.

Evenly sprinkle the chopped pistachios and dried cranberries over the Brie, pressing them slightly into the cheese. Drizzle the honey generously over the top, creating a sweet and sticky glaze that will caramelise in the oven, and scatter fresh thyme sprigs all over.

Bake in the preheated oven for 12-15 minutes, or until the Brie is gooey and soft, and the toppings are golden brown.

Remove from the oven and let it rest for a few minutes before serving. The warm, melted Brie is best enjoyed with crispy crackers or sliced baguette.
