Vanilla Strawberry Compote Yoghurt Pots

Ingredients
Ecklin South A2 Greek Yogurt
Granola clusters (of your choice)
Vanilla Strawberry Compote – Serves 4
1 punnet of strawberries, stem removed and cut in quarters
1 vanilla bean, split
1 tsp honey
¼ cup water
1 tbsp. caster sugar
Method
1. To make the strawberry compote – Add to a small saucepan over medium heat, strawberries, caster sugar, water, honey & vanilla bean and bring to a boil. Reduce heat & simmer for 10 minutes until the strawberries turn soft & the liquid thickens. Set aside and allow to completely cool.
2. To assemble granola pots – add a layer of granola, Ecklin South A2 Greek Yogurt & then strawberry compote. Repeat with one more layer finishing off with the strawberry compote.
3. Serve & enjoy!
