
Ingredients
300g smoked salmon slices
4 tbsp. olive oil
2 tbsp. capers, drained
1/4 red onion, finely sliced (optional)
1 tbsp. fresh chives, roughly chopped
1/2 lemon juice + extra for serving
Salt & pepper for seasoning
Method
Heat the olive oil in a medium saucepan and carefully add the capers in. Fry until they are nice and crispy, about 1 to 2 minutes. Turn off the heat to cool slightly.
Pour the oil and capers into a bowl, add the chopped chives, lemon juice, season with salt and pepper and gently mix together to combine.
Arrange your smoked salmon slices on a large serving platter. Drizzle over the capers and olive oil evenly. If you like you can scatter the sliced red onion all over. Squeeze some extra lemon juice with extra chives if desired and serve.
