There is nothing that I love more than a simple and classic pasta dish. This recipe is exactly that. Using a beautiful quality extra virgin olive oil is the key to any great sauce and I’ve used it in this delicious classic.

Spaghetti with Olive Oil, Chili & Garlic - Bertolli Australia x The Delightful Cook Partnership


Ingredients


500g dried spaghetti

½ cup Bertolli Organic Extra Virgin Olive Oil + extra for drizzling

10 cloves garlic, peeled and finely sliced

1 to 2 hot red chillies, finely sliced

½ cup finely chopped parsley + extra for serving

Salt to season


Method

1. Bring a pot of water to the boil, add salt and add the pasta. Cook the spaghetti just under the recommended time, drain and set aside.

2. While the pasta is cooking, slice the garlic, chilli and finely chop the parsley. In a saucepan over low heat, add the ½ cup Bertolli Organic Extra Virgin Olive Oil. Add the sliced garlic and sauté for 1-2 minutes until soft.

3. Add the sliced chilli and sauté for a further 1-2 minutes, until soft and fragrant. Stir in the parsley and season with a little salt.

4. Add the cooked spaghetti into the saucepan and toss gently to combine all the ingredients.

5. Serve Spaghetti with Olive Oil, Chili & Garlic on a large platter with another scatter of freshly chopped parsley and another drizzle of Bertolli Organic Extra Virgin Olive Oil.
