Spaghetti Carbonara

Spaghetti Carbonara

Serves 4 - 6


500g Barilla spaghetti pasta

200g of pancetta

1 1/4 cups grated pecorino romano cheese

3 eggs, whisked

Pepper to season


1. Add eggs, pecorino and pepper into a bowl, whisk well & set aside.

2. Bring a pot of salted water to the boil, add pasta & cook just under the recommended time.

3. Cook the pancetta in a saucepan over medium heat for 10 minutes until pancetta starts to crisp.

4. Reserve 1 cup of pasta water. Drain pasta & add into the saucepan with the pancetta. Reduce to the lowest heat. Add water, simmer & stir for 1 minute.

5. Turn off heat & stir in the eggs & pecorino and gently mix together. The residue heat will cook the egg and will create a creamy sauce.

6. Serve with extra pecorino.
