Roasted Vanilla Strawberries - The Delightful Cook




Ingredients


500g fresh strawberries, steams removed and sliced in halves or kept whole

1/2 cup white sugar or caster sugar

2 vanilla beans, split in half lengthwise and seeds scraped

1 tbsp. honey


Method


Preheat oven to 180c/350°F.


Rinse the strawberries well in water and remove the steams. Slice strawberries in halves, quarters or keep them whole, adding them to a baking tray.


Add sugar, vanilla bean and drizzle with honey. Stir really well making sure all the ingredients are well combined.


Place into the oven and roast until soft and jammy, about 20-25 minutes.


Cool completely before placing into jars. Serve warm over your favourite foods like pancakes, ice cream, scones and cakes.
