Ingredients

6 medium apples, peeled, cored and diced

Juice of half a lemon

1/2 caster sugar

2 tsp vanilla

1 tsp cinnamon

1/2 cup water

For the Crumble

1 cup rolled oats

1/3 cup plain flour

200g butter, roughly chopped

1/2 cup brown sugar

1 tsp cinnamon

Ice-cream to serve

Method

Preheat oven to 180C/350f. In a medium saucepan over low heat, combine diced apples, lemon juice, caster sugar, water, vanilla and cinnamon. Stir until combined and cook over a low heat for 10 minutes until the apples are softened. Turn off the heat and set aside.

For the crumble, in a large bowl combine the oats, brown sugar, flour, cinnamon and butter. Using your fingertips to rub the butter into the mixture until it resembles roughly breadcrumbs.

Pour cooked apples evenly into a baking dish and scatter the crumble mixture all over, using a spoon to gently press down and fill in the gaps. Bake in the oven for 20-25 minutes, until the crumble is golden brown.

Serve immediately with vanilla ice-cream.
