John West Deli Tuna Pasta Bake
350g spiral pasta (any choice of pasta)
3 x 90g tins John West Deli Tuna extra virgin olive oil blend & pink salt
700g Italian tomato passata (1 bottle)
1 tbsp tomato paste
1 small onion, finely diced
2 garlic cloves, minced
2 tbsp olive oil
2 cups shredded mozzarella
¼ cup parmesan cheese
Salt & pepper to season
Handful fresh parsley, finely chopped
Preheat oven to 180c. Cook pasta 2 minutes less according to packet instructions. Reserve 1 cup of pasta water, drain & set aside.
To make the sauce, heat a medium saucepan over medium heat. Add olive oil, garlic & onion & cook for 2-3 minutes or until soft.
Add tomato paste, tomato passata & stir to combine. Season with salt, pepper & reduce to a low heat. Simmer for 10 minutes until sauce thickens.
Turn off the heat, add the pasta, pasta water, tuna & half of the mozzarella. Gently stir to combine all the in. Transfer pasta into a baking dish & add the remaining mozzarella & parmesan cheese over the top. Bake for 15-20 minutes or until golden & crunchy.
Serve with extra parmesan cheese & freshly chopped parsley.
