Slow Cooker Chicken Curry

serves 4

Ingredients

1 kg chicken thighs

4 tbsp. Keen’s Curry Powder

1 onion, roughly diced

3 garlic cloves, roughly diced

1 tsp cinnamon

1 tsp paprika

2 tsp white sugar

1 tbsp. ginger, grated

400g coconut cream

1 bunch of baby broccoli, roughly chopped

1 cup chicken stock

2 tbsp. fresh coriander

1 tbsp. peanut oil

Method

  1. In a saucepan on medium heat, add peanut oil & brown the chicken, about 2-3 minutes. Place the chicken into the slow cooker.

  2. Using the same saucepan, fry off the onion, garlic & ginger for 1-2 minutes. Add in the curry powder, paprika & cinnamon & fry off for a further minute. Turn off heat & add into the slow cooker.

  3. Add coconut cream, broccoli, coriander and chicken stock into the slow cooker & gently toss ingredients together to ensure all the chicken is evenly coated.

  4. Cover & cook on low heat for 5-6 hours or high heat for 3-4 hours.

  5. Serve over basmati rice and garnish with crushed peanuts & fresh coriander.

  6. Enjoy!
