Changing it up this time with a beautiful Smashed Pea & Mint Bruschetta with showcasing the creamiest cheese you'll ever come across with delicious Fromager d'Affinois Truffles Cheese.

Smashed Pea & Mint Bruschetta with Fromager d'Affinois Truffle Cheese
300g frozen peas
150g Fromager d'Affinois Truffle, thinly sliced
1 x garlic clove, minced
¼ cup milk
2 tbsp. olive oil
Zest of 1 lemon
2 tbsp. fresh mint, roughly chopped
Salt & pepper to season
Sourdough slices chargrilled
In a saucepan over low heat, add olive oil, garlic & cook for 30 seconds. Add milk & bring to a simmer.
Stir in the peas & gently cook for 4-5 minutes. In the last minute add the butter, stirring well & making sure the peas are well coated & the butter has melted. Turn off the heat & allow the peas cool in the pan for 5-10 minutes.
Once cooled, add lemon zest & mint and using a fork to roughly mash the mixture. Season with a little salt & pepper to taste.
Chargrill the sourdough slices on both sides & divide the pea mixture on each of the slices.
Scatter slices of Fromager d'Affinois Truffle over the top.
Serve with a drizzle of extra olive oil, rocket, fresh mint leaves.
