Grilled Peach, Prosciutto and Mozzarella Salad

Delicious juicy peaches aren’t just for a sweet snack or dessert. Try these yummy grilled peaches with balsamic glaze to up your salad game.

Accompanied with salty prosciutto, creamy mozzarella and peppery rocket to create a mouthful of flavour, it’s the perfect way to welcome summer.

 

Grilled Peach, Prosciutto and Mozzarella Salad

Ingredients

4 yellow peaches, cut into wedges

200g rocket leaves

8 slices of prosciutto

2 mozzarella balls, sliced or whole

¼ cup Balsamic glaze

¼ cup Olive oil

Sea salt & pepper to season

Balsamic Glaze

½ cup balsamic vinegar

3 tbsp brown sugar

Method

1. Preheat a char-grill pan over medium heat

2. Brush the cut sides of the peaches with the balsamic glaze and grill for 2-3 minutes each side or until charred. Set aside to cool.

3. Place the rocket in a medium bowl and season with olive oil, salt & pepper.

4. Arrange the rocket, peaches, prosciutto and mozzarella on a platter. Drizzle with remaining balsamic glaze.

5. Enjoy!
