How we do lunch at my house... just simple ingredients that pack a big punch! It's one of the most simplest meals you can create and all I can say is the messier the better!

I normally make this on a weekend when I really want something quick and easy. Serve with crusty buttery break and beers.. It's a fine way to end the weekend.

Pan Fried Pippies

Ingredients
1kg fresh pippies
4 cloves garlic, roughly chopped
2 large fresh chillies, roughly chopped
1 cup fresh parley, roughly chopped
1/2 cup olive oil
generous squeeze of lemon
Sea salt
Method
1. In a large bowl combine the pippies, garlic, olive oil, chilli,
salt, parsley and lemon. Mix well and make sure all the pippies are well coated in the mixture.
2. Heat a grill pan on medium heat and add the pippies to the pan, Constantly move the pan over the heat for about 2-3 mins., the pippies will start to open up. Transfer into a bowl. Discard any that haven't opened during the cooking time. Drizzel the remaining liquid from the pan over the pippies
3. Serve hot with crusty bread.
4. Enjoy x
