I’ve always been a little reluctant to cook with seafood over the years, as I’m afraid of over cooking but this was something that I just had to put together.
A simple dressing can really lift your A-game with grilling seafood and made a boring platter really shine. This one was as easy as pie as the ingredients are all found in your fridge or pantry.
Always find the best quality of seafood that you can. I shop at my local markets, including the Preston Market in Melbourne which is not far from where I live. You'll usually find me strolling around on a Saturday morning, coffee in hand checking out the local produce and what's on offer. I was lucky enough to find some stunning green prawns and I had my eye on some beautiful blue swimmer crab which i'll be getting my hands into very soon.
Try this while the sun is still out.
Grilled Seafood Platter
24 green prawns peeled (tails intact & deveined)
500g calamari rings
1 cup extra virgin olive oil
3 cloves garlic, finely chopped
Juice of one lemon
1/2 cup roughly chopped parsley
1. Combine the oil, garlic, parsley, lemon juice and salt in a bowl and coat the calamari, prawns and pipis. Reserve some of the mixture to serve.
2. Heat a hot plate or BBQ on medium-high. First cook the pipis for 2-3 mins or until each of them open. Once all have opened remove from heat and set aside. Discard the ones that remain shut.
3. Next cook the calamari and prawns for 2-3 mins or until opaque. Remove from heat.
4. Arrange on a platter and serve with left over dressing and a squeeze of lemon.
5. Enjoy x
