Rigatoni with Basil Pesto

That rich vibrant colour! I do enjoy a beautiful pesto every so often and there are so many different versions of it that you can create.

This is a simple yet tasty one that will work well on any pasta. For this I chose rigatoni as the pesto gets caught right in the middle of each one.


Rigatoni with Basil Pesto


Bunch of fresh basil

1/2 cup Parmesan cheese

2 cloves garlic minced

1/4 cup hazelnuts, roasted until brown and skins removed

1 tsp salt

squeeze lemon juice

1/3 cup olive oil


1. Add all the ingredients into a food processor and mix well. Season according to taste.

2. Mix with any pasta you desire but I chose rigatoni. Cook pasta according to packet instructions.

3. Drain pasta and mix in pesto. Sprinkle with extra cheese.

4. Enjoy x
