
Garlic & Herb Mozzarella Filled Flatbreads
(Makes 8)
Ingredients
2 cups all-purpose flour
7g dried yeast
1 cup warm water
1 tbsp. olive oil
220g shredded mozzarella cheese
3 garlic cloves, minced
3 tbsp. parsley, roughly chopped
30g butter, melted
Sea salt and pepper
Method
In a medium bowl combine the flour, oil, yeast, salt and water and mix to incorporate completely. Transfer dough to a lightly dusted surface and knead for 5 minutes until the dough is soft. Place back into the bowl, cover well with plastic wrap, cover with a tea towel and place it in a warm spot for an hour to rise.
While the dough is resting, make the garlic butter. Combine the melted butter, parsley, salt and pepper and stir well to combine. Set aside.
Once the dough has risen, transfer to a lightly floured surface and divide to four equal pieces. Divide each piece again in half which will leave you with eight pieces of dough. Roll out each ball of dough into even disks about 15cm in diameter and 1 1/2cm in height.
Place a handful of shredded cheese into the centre pf the dough. Gather the outside of the dough by bringing it into the centre with your hands, creating a smaller ball. Carefully roll out the dough into 10cm rounds. Repeat this process until all the dough and cheese is used.
Heat a non-stick fry pan over medium heat. Brush one side of the flat bread with a little olive oil and place that face down into the fry pan to cook, roughly for 2-3 minutes. Brush the top side, flip and cook for a further 2-3 minutes until golden brown. Carefully remove from the pan onto plate. Repeat with the remaining rounds.
Coat each side of the flatbreads with the garlic and herb butter while they are still warm and golden.
Serve immediately and enjoy!
