Burrata with Calabrian Chilli and Herb Oil - The Delightful Cook


2 x 125g That's Amore Cheese Burrata cheese

1/2 cup extra virgin olive oil

2 cloves garlic, minced

2 tbsp Calabrian chili paste

2 tsp fennel seeds

2 tbsp fresh parsley leaves, finely chopped

Zest of 1 lemon

salt to season

1 large baguette, sliced diagonally


In a small saucepan add minced garlic, Calabrian chili paste, fennel seeds, salt to season and olive oil and heat and stir to combine. Heat until just warmed through.

Turn off the heat and stir in chopped parsley and lemon rind and stir well to combine. Allow to sit for 5 minutes for the flavours to infuse.

Slice baguette diagonally, drizzle a little olive oil on each slice and fry in a large pan until both sides are crunchy and golden brown.

Drain burrata and serve on a large platter. Using a knife to slice open the top to reveal inside. Pour a generous amount of the chilli and herb oil all over the burrata cheese, making sure it's completely covered. Add all little more fresh parsley and lemon rind just before serving.

Serve immediately with crunchy bread.
