Baked Baby Eggplants with Spicy Yoghurt Sauce & Fried Chickpeas... that's a mouthful! In all honesty this recipe I just made up one morning in the kitchen so it may need some tweaking to it but had to share because it was goooood!!! I had some leftover eggplants & yoghurt & wanted to combine the two. It's the combination of chili that gets your heart racing but you can leave it out if it doesn't agree with you. With or without it's still pretty tasty & perfect for an easy dinner. Baked Triple Cream Brie with Figs, Pistachios & Honey Serves 4 Ingredients 1 wheel of triple cream brie 2 x fresh figs, quartered 2 tbsp honey 1 tbsp chopped pistachios Method Preheat oven to 180c. Place the brie in a baking dish & arrange the fresh figs on top. Drizzle the honey over the figs & scatter the pistachios over the top. Cover loosely with foil & place in the oven for 15-20 mins.
