Tuna Pasta Bake

So early this month I received a wonderful parcel in the mail. My Nonna had accepted the delivery on my behalf and I went around to her house to pick it up. Little did I know that a few of us would need to help me bring it back home. Bless the team at Sirena Tuna!! Not only did I receive some wonderful products, I was pretty much set with tuna for the next year! I needed three people to help. Thank you once again to the team at Sirena Tuna for the hook up! Now it was up to me what to make.... I absolutely love fish and of course.. pasta! I put together a little quick and easy meal inspired by my childhood. Mum used to make this for a real easy mid week meal. A delicious pasta bake with olive

Mozzarella in Carrozza

Fried mozzarella sounds good right? I ate this while travelling in Italy and all I can say is wow! Eating this in the back streets of Rome, I thought to myself how the Italian's make the simplest things taste so extraordinary. I mean it's really just fried cheese, but how they do it.. (insert sigh) So I thought that I would recreate this once I got back to Australia. It's so quick and easy to make that the only problem is stopping at one. Enjoy! Caroline x Mozzarella in Carrozza - Serves 4 Ingredients 8 slices white bread 1 x 150g mozzarella ball, cut into four thick round slices 3 eggs Flour Vegetable oil for frying about 2 tbsp Method 1. Cut the crusts of each of the bread slices. On four

Fusilli with Broccoli Pesto

When I was a child pasta with pesto was one of my least favourite meals. I don't know if it was the basil taste or the colour green but I didn't want to go near it. Lucky I've changed since then and I can honestly say it's now one of my favourites. Not to mention one of the easiest. There are many different versions of pesto you can make. 9/10 times I have the ingredients in my pantry so it's very simple to make. This one is a little extra special as I've added some broccoli florets to the mix. Yes... the kids won't know! Shhhh.... Will keep this our little secret! Caroline x Fusilli with Broccoli Pesto - Serves 4 Ingredients 500gm Barilla fusilli pasta 2 cups frozen broccoli florets 2 clove

Spaghetti Carbonara

So I had a little craving of delicious, creamy carbonara after watching an afternoon cooking show. It's dangerous working from home! On a positive note, I do get a lot of amazing ideas when I work from the comfort of my own home. You'll usually find me scribbling down ideas after watching a t.v or a even washing the dishes. When I was in Italy, I had the most amazing spaghetti carbonara in one of the little lane ways in the back streets of Rome. My cousin and I started to chat to one of the waiters at the restaurant that we were having lunch at after an afternoon of exploring. His name was Angelo. Named after Saint Angelo, he explain that he grew up near the Vatican City and that he and his
