Breakfast Pizzas

Serves 4 Ingredients 4 eggs 4 small wholemeal pita breads ½ onion finely chopped 1 garlic clove finely chopped 1 cup mozzarella 2/3 cup grated parmesan 3-4 cups baby spinach 100g finely sliced prosciutto Shaved parmesan (garnish) Grilled asparagus (optional) Olive oil Method 1. Preheat oven to 180 degrees. 2. In a saucepan on medium heat add the olive oil and butter, once melted add garlic and onion and cook until the mixture starts to caramelise. 3. Add the baby spinach and cook until they start to wilt (about 1 min) Set aside to slightly cool. 4. To prepare the mini pizzas, evenly spread each one on a baking tray lined with baking paper. 5. Italian Baked Eggs & Pork Sausage

Serves 4 Ingredients 4 eggs 4 Italian Pork Sausages (Skins removed and roughly chopped) ½ onion finely chopped 1 clove garlic finely chopped ½ tsp dried chilli flakes ½ tsp fennel seeds 1 cup of passata 400g (1 can) diced tomatoes 1 tbsp butter Olive oil Salt & Pepper Method 1. Preheat oven to 180 degrees. 2. In a saucepan on medium heat add the olive oil and butter, once melted add garlic and onion and cook until the mixture starts to caramelise. 3. Add the pork sausages and cook for 5 mins or until they start to brown. 4. Add chilli flakes and fennel seeds and cook for a further 1-2 mins or until fragrant. 5. Add diced tomatoes and passata and mix well. 6. Simmer sauce for a further 10 min

chocolate chip cookies

chocolate chip cookies 2 cups of white flour 1 1/2 cups of milk chocolate chips 150g of melted butter 2 eggs 1 cup brown sugar, tightly packed 1 tsp baking powder 1/2 tsp salt 1. Preheat oven to 160 degrees. 2. Place all dry ingredients together in a large bowl and mix well. 3. Add eggs and melted butter and again mix well. 4. On a lined baking tray roll out cookie mixture into medium size balls and place them evenly out. 5. Place in the oven and cook for 12-15 mins and place on wire rack to cool. 6. Enjoy x
