Homemade Granola

I make this all the time but it never lasts more than a few days in my house. I sprinkle this all over my food and tastes incredible and the best thing is it's quick and easy! I made some the other day and mixed it with some Greek yoghurt and fresh berries topped with a little drizzle of honey. Light and fresh, perfect for breakfast or a snack! 3 Cups of Oats 1 Cup Three Coloured Quinoa (rinsed) 1/2 Cup Sunflower Seeds 1/2 Cup Chia Seeds 1/2 Honey 1 Tbsp Cinnamon 2 Tbsp Vegetable Oil 1. Preheat the oven at 160 degrees and line a baking tray with baking paper. 2. In a bowl combine all the dry ingredients together. 3. Add the wet ingredients to the dry and mix the mixture well.

Roasted Pumpkin & Kale Soup

1 Kent Pumpkin (Skin removed and cut into pieces) 1 Red Capsicum (Seeds and stem removed and into cubes) 1 Red Onion (Skin removed and cut into quarters) 2 Cups of Kale chopped 2 Cloves of Garlic 3 Cups of Vegetable Stock 1 Tbsp Ground Cummin 1 Tbsp Smokey Paprika Olive Oil Salt & Pepper 1. Preheat the oven to 160 degrees. 2. Combine Pumpkin, Red Onion, Capsicum & Garlic in a large roasting pan. Season well with Olive Oil, Salt & Pepper. Roast for 40 mins. 3. In a large saucepan heat some Olive Oil and add the roasted garlic and red onion. 4. Add Cumin and Sweet Paprika and mix well. 5. Add Roasted Pumpkin and Capsicum along with any of the pan juices from the pan to the sauce

Hello everyone and I welcome you all to my blog! As many as you know I'm Caroline, 30 and currently live in Melbourne. I'm a big movie buff, my family and friends are everything and I absolutely love to cook and yes eat! Growing up in a large Italian family, we were surrounded by food and was eating a seven course meal nearly every night! I've always been a creative person growing up and have enjoyed inventing new recipes to share with my family and friends. It wasn't until about a year ago that I truely embraced my passion of cooking and started an Instagram account in which I could share my work with the rest of the world. I've taken it one step further and have created a cooking blog.
