Sautéed Spinach with Cannellini Beans

A wonderful breakfast is a great way to start the day. Something that I've eaten all my life is the Italian version of "beans on toast" which is spinach and cannellini beans accompanied with garlic, olive oil and chilli.

It's definitely one you can make in less than 10 mins and one you'll continue to make for years. A tasty and healthy meal that will surely send your tastebuds tingling.

Sautéed Spinach with Cannellini Beans

Ingredients:

2 tablespoons olive oil

2 large cloves of garlic, peeled and thinly sliced

1 can of cannellini beans, rinsed and drained

Half of a small onion, diced

4 large bunches of fresh spinach, ends trimmed, washed and drained (You can also use baby spinach)

2 tsp of dried chilli flakes

Sea salt

Method.

1. Heat olive oil in a saute pan over a medium heat. Add the garlic and onion and cook for one minute.

2. Add the beans into the garlic and oil and cook for around 1-2 minutes, making sure you don't squash them.

3. Add the spinach and chilli flakes. Cook for until spinach has wilted and then season with salt. Remove from heat.

4. Drizzle with extra-virgin olive oil and serve on top of your toasty bread.

5. Enjoy!
