Fried mozzarella sounds good right? I ate this while travelling in Italy and all I can say is wow! Eating this in the back streets of Rome, I thought to myself how the Italian's make the simplest things taste so extraordinary. I mean it's really just fried cheese, but how they do it.. (insert sigh)
So I thought that I would recreate this once I got back to Australia. It's so quick and easy to make that the only problem is stopping at one.

Mozzarella in Carrozza - Serves 4

Ingredients
8 slices white bread
1 x 150g mozzarella ball, cut into four thick round slices
3 eggs
Flour
Vegetable oil for frying about 2 tbsp
Method
1. Cut the crusts of each of the bread slices. On four slices of bread, place mozzarella slices and then cover with the other 4 bread slices, pressing down gently. Careful not to completely squash them.
2. Dip the edges of the rectangles into the flour. Shake off any excess flour.
3. Beat the eggs in a bowl and dip the rectangles of mozzarella in carrozza into the egg.
4. Heat the oil in a pan and fry your mozzarella in carrozza until it is nicely browned and becomes crisp on the outside. Fry on both sides. 5. Drain the mozzarella in carrozza and place on paper towels before serving them hot.
